Ingredients
10 bone-in, skin-on chicken thighs
5–7 medium potatoes
2 tablespoons Celtic sea salt, or salt to taste
2 tablespoons Italian seasoning
1 teaspoon granulated garlic or garlic powder
2 cups heavy whipping cream
Directions
Preheat the oven. Heat the oven to 375°F. Choose a deep baking dish large enough to hold the chicken and potatoes without crowding.
Prepare the potatoes. Wash and peel the potatoes if desired. Cut them into evenly sized pieces so they cook at the same rate, then spread them in the baking dish.
Season the chicken. Pat the chicken thighs dry. Season both sides with the sea salt, Italian seasoning, and granulated garlic. Use less salt if substituting regular table salt.
Assemble the dish. Place the seasoned chicken thighs skin-side up over the potatoes. Pour the heavy whipping cream evenly around the chicken and potatoes.
Cover and bake. Cover the baking dish tightly and bake for about 45 minutes.
Finish uncovered. Remove the cover and continue baking for 20–30 minutes, or until the potatoes are fork-tender, the sauce has thickened, and the thickest part of each chicken thigh reaches at least 165°F.
Rest and serve. Let the dish rest for 10 minutes so the sauce can settle and thicken before serving.
Recipe Notes
Cut the potatoes into similar-size pieces so they finish cooking together.
Celtic sea salt is milder than table salt. If using another salt, begin with less and adjust to taste.
Chicken thighs vary in size, so use a thermometer to confirm they have reached at least 165°F.
If the potatoes need more time, cover the dish again and continue baking until tender.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheat gently and add a splash of cream if the sauce becomes too thick.
